Remember, Long-grain white rice is a good choice because it tends to remain separate and fluffy when cooked in a one-pot dish. Avoid rice varieties that are intended to become particularly sticky unless you’re deliberately adapting the recipe.

Grab a heavy Dutch oven, or if you’d rather go with it, a cast iron skillet. Set it on medium heat and let it warm up a bit. Add a small touch of oil, then throw in the sliced sausages and fry them for roughly 2-3 minutes, until they turn crispier, not just lightly browned. Get the sausages out once they’re properly crisp and hold aside. Now add the diced chicken into the same pan and sauté them until it starts to turn golden in colour. Once it is done, remove it from the skillet into another bowl with the help of tongs.

Step 3: Sauté The Holy Trinity 

After preparing the meat, set it aside, just for a moment. Now add a little oil to the skillet and add all the veggies, like bell peppers, chopped onion, and celery, to it. Sauté them until they soften a bit. To check if they become soft or not, use the wooden spatula to check by pressing them a little bit. Add the chopped garlic at the end so that they dont burn, ok. Now toss all the veggies together over medium heat.

Step 4:  Toast the Rice And Simmer

When the veggies are cooking, turn the flame down a little, then pour in the rinsed long-grain rice, stir everything till it looks well mixed, and let it toast for about 2 minutes. After that, add the diced tomatoes, or canned tomatoes if that’s what you have; also add 3-4 cups chicken broth, the Creole seasoning, 2 bay leaves, and the ready meats ( chicken and sausages ). Now put the lid on the pan, keep the heat on low-medium, and cook it for the next 20 minutes.
