  • 1 small zucchini, diced
  • 1/4 cup chopped red onion
  • 1 tsp cumin powder
  • 1 tsp paprika
  • Salt & black pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

Instructions:

1. Take the Veggies:

Put olive oil to heat in a frying pan. After that add onion, bell pepper, and zucchini and stir fry them until they become soft. Add cumin, paprika, salt, pepper and black beans as well as corn. During the next 2-3 minutes boil. Take off the fire.

  • 1 cup shredded cheddar or pepper jack cheese
  • 1 cup cooked, shredded chicken (grilled or rotisserie)
  • 1/2 cup bell peppers, sliced
  • 1/4 cup sliced onions
  • 1 garlic clove, minced
  • 1 tsp taco seasoning
  • 1 tbsp olive oil
  • Pickled jalapeños (optional)

Instructions:

1. Cook the Filling:

Add olive oil to a pan and heat it. Add some garlic, onion and bell peppers. Stir tender. Add chicken in pieces and taco seasoning. Stir and fry 2-3 minutes.

Take two pieces of tortilla and spread cheese in them. Add the mixture of the chicken and pepper. Optional: Jalape nos can be added to give spiciness. Add additional cheese on top and cover both with a tortilla.
