Part 1: Cooking the Beef Tongue

Ingredients:

  • 2-3 lbs Beef tongue
  • 1/2 large white onion
  • 1 head of garlic
  • 1/2 tsp whole black peppercorns
  • 4 bay leaves
  • 5 sprigs of mint
  • 4 small dry chiles guajillos
  • 8 cups of water
  • 1 1/2 tsp kosher salt
  • 1/2 tsp dry oregano

Instructions:

Prepare the Tongue:

Rinse the beef tongue under cold water. If it’s a larger tongue, you can cut it into a few large pieces. It helps you to reduce the cooking time.

Braise the Tongue:

In a large pot or Dutch oven, place the beef tongue. Add the onion, the head of garlic, peppercorns, bay leaves, mint sprigs, guajillo chiles, water, kosher salt, and dry oregano together.

Simmer:

Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to a low, gentle simmer. Cover the pot with a lid.

Cook Until Tender:

Allow the tongue to simmer for about 1.5 to 2 hours, or until it is completely fork-tender. Check the water level halfway through and add more hot water if needed to keep the tongue mostly dipped.

Peel the Tongue:

Carefully remove the cooked tongue from the pot and place it on a cutting board. While it is still warm, peel off the hard outer skin. This is much easier to do when the tongue is warm.

Dice the Meat:

Once the tongue has cooled down, dice the tender meat into small, bite-sized pieces.

Part 2: Making the Salsa

Ingredients:

  • 14 oz roma tomatoes
  • 1/2 medium white onion, roughly chopped
  • 4 garlic cloves
  • 1/3 cup dry chiles de arbol
  • 2 TBSP white distilled vinegar
  • 1 tsp salt
  • 1/4 cup grapeseed oil + 4 TBSP
  • 1 corn tortilla
  • 2 tsp sesame seeds

Instructions:

Toast the Chiles and Tortilla:

In a dry skillet or comal over medium heat, toast the chiles de arbol until they are fragrant and their color slightly darkens. Be careful not to burn them. Also, lightly toast the single corn tortilla until it is slightly browned and crisp.

Fry the Aromatics:

In a separate skillet over medium heat, add the 1/4 cup of grapeseed oil. Fry the chopped tomatoes, onion, and garlic cloves until they are softened.

Blend the Salsa:

Transfer the toasted chiles, toasted tortilla, fried tomatoes, onion, and garlic to a blender. Add the white distilled vinegar, salt, and sesame seeds. Blend until you have a smooth or slightly chunky salsa, to your preference.

Finish the Salsa:

In the skillet you used for frying, add the remaining 4 tablespoons of grapeseed oil. Carefully pour the blended salsa into the hot oil. Cook the salsa for about 5-7 minutes, until it has a deeper red color and the flavors have combined.

Making the Salsa

Part 3: Final Preparation & Assembly

Ingredients:

  • Diced beef tongue
  • 1/2 tsp lard
  • 1/2 tsp salt
  • 8 pearl green onions
  • Lard or oil for tortillas
  • Corn tortillas
  • Chopped white onion
  • Chopped cilantro
  • Lime wedges

Instructions:

Brown the Tongue:

Heat a skillet over medium-high heat. Add the lard and the diced beef tongue. Season the tongue with salt. Cook, stirring occasionally, until the meat is lightly browned and has some crispy edges.

Sauté the Green Onions: 

In a separate skillet, add a little lard or oil and lightly saute the pearl green onions until they are soft and slightly browned.

Warm the Tortillas:

In the skillet you used for the tongue (or a separate one), warm the corn tortillas. You can use a bit of lard for extra flavor if you like.

Assemble the Tacos:

Place a generous portion of the browned beef tongue onto each warm tortilla. Top with a spoonful of the salsa, a sprinkle of fresh chopped onion, and a sprinkle of chopped cilantro.
